3,000 Pounds of Corned Beef Barrel-Cured at Casey's

If you're on the hunt for corned beef this St. Patrick's Day weekend, Casey's Market in Western Springs has a ton of it. Manager Joe Lane said they'll have made about 3,000 pounds of it.
Casey's uses a four-week process to slow-cure the meat in barrels, giving it a flavor Lane said his grandfather used at his store in Villa Park dating back 40 years.
"That way you get the best, freshest corned beef you can have," he said.
Casey's also sells cooked cabbage and red potatoes. To order some, stop in at 915 Burlington Ave. or call 708-246-0380. And do it quickly, because many people have placed orders well in advance.
